Roll puff pastry dough in sugar, fold, cut, and voil\u00e0! Palmiers (aka elephant ears).<\/p>\n<p>I made a batch today from puff pastry dough I rescued from the dark recesses of my freezer. Months ago I mixed a lot of Joanne Chang\u2019s easy, buttery <a href=\"http:\/\/recipephany.com\/?p=7473\">Quick Puff Pastry<\/a> from <em>Flour<\/em> for whatever might arise. Chang says you can freeze it for up to a month, but c\u2019mon, you can even freeze fish for longer than that. Here it is almost a year later and the silky dough rolled out as smoothly as if it were fresh.<\/p>\n<p>Today I lost track of my folds and they came out more like cauliflower ears than classic elephant ears. But no matter how you fold it, the buttery, flaky layers create a sweet, tender crunch. You can add cinnamon, but plain palmiers give you that deliciously pure, caramelized-sugar flavor that screams Maillard reaction.<\/p>\n<p>Don\u2019t expect these to be elephant sized. More like mouse ears, they are tr\u00e8s petite, only a couple of inches across, and perfect with a cup of tea or a dessert bowl of <a title=\"Quick and Creamy Microwave Chocolate Pudding\" href=\"http:\/\/recipephany.com\/?p=605\" target=\"_blank\" rel=\"noopener\">Quick and Creamy Microwave Chocolate Pudding<\/a>.<\/p>\n<h3><strong><span style=\"color: #ff6600;\">Palmiers<\/span><\/strong><\/h3>\n<ul>\n<li>1 sheet of\u00a0 homemade <a href=\"http:\/\/recipephany.com\/?p=7473\">Quick Puff Pastry<\/a> (1 pound) or all-butter store-bought. If frozen, defrost overnight in the fridge.<a href=\"http:\/\/test.recipephany.com\/wp-content\/uploads\/2016\/12\/palmiersbsm.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-2846\" title=\"Palmiers\" src=\"http:\/\/test.recipephany.com\/wp-content\/uploads\/2016\/12\/palmiersbsm-300x214.jpg\" alt=\"\" width=\"180\" height=\"128\" srcset=\"http:\/\/recipephany.com\/wp-content\/uploads\/2016\/12\/palmiersbsm-300x214.jpg 300w, http:\/\/recipephany.com\/wp-content\/uploads\/2016\/12\/palmiersbsm.jpg 600w\" sizes=\"auto, (max-width: 180px) 100vw, 180px\" \/><\/a><\/li>\n<li>\u00bd cup sugar<\/li>\n<li>1 tablespoon cinnamon (optional), or to taste<\/li>\n<\/ul>\n<ol>\n<li>Mix sugar and cinnamon, if using. Spread half the sugar mixture onto the work surface, place the sheet of dough on top, and distribute the other half evenly over the top of the dough. Press down on the dough with the rolling pin to flatten and spread it out uniformly. Then roll it to about a 10 inch square. You can cut off pieces, move and reattach as needed to make the square.<\/li>\n<li>Fold the sides of the dough halfway toward the center. (If you want them to look like hearts, as in the picture at the top of the post, fold them to touch at the center.) Then fold them again so that the sides meet in the middle. Finally, fold one half over the other as if to close a book and place on its side. This will be bulky, but press down lightly with the rolling pin to flatten.
