This recipephany produces a classic croquette from the early 50s. But it is neither deep fried nor b\u00e9chamel-laden, as you\u2019d find in a diner. So you can take comfort in the wholesomeness of Oven Chicken Croquettes. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">More like chicken patties, these croquettes are best served with spicy barbecue or horseradish sauce. Surprisingly, they have no onions. More surprisingly, I\u2019ve never been tempted to add any. (Note: Since I posted this, however, I tried adding chopped scallions. But this Mini-Prep does in seconds what takes me minutes with a sharp knife, and considering how I am with sharp knives, the extra electricity is well worth it.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><span style=\"color: #ff6600; font-weight: bold;\">Oven Chicken Croquettes<\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 cups cooked chicken, ground<\/li>\n\n\n\n<li>1 cup celery, finely chopped<\/li>\n\n\n\n<li>1 cup soft bread crumbs<\/li>\n\n\n\n<li>1 egg, well-beaten<\/li>\n\n\n\n<li>1 teaspoon salt<\/li>\n\n\n\n<li>1\/8 teaspoon pepper<\/li>\n\n\n\n<li>Chopped scallions (optional)<\/li>\n\n\n\n<li>\u00bc cup melted butter or margarine<\/li>\n\n\n\n<li>\u00bd cup dry bread crumbs&nbsp;(from bread toasted in the oven and ground up in the Mini-Prep, of course)<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Preheat oven to 375\u00b0.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In separate batches, process the bread to make soft crumbs (exactly one hamburger bun defrosted from the freezer), grind chicken pieces, and chop the celery (roughly cut first for even processing).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Combine everything but the melted butter or margarine and dry bread crumbs. Shape into 6 croquettes. Roll each in melted margarine or butter, then in crumbs. Place in shallow pan. Bake until a golden brown.
