It captures the bright taste of broccoli sweetened by aromatics and smoothed out with melted sharp cheddar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The real recipephany here is a bit of magic. Instead of turning olive drab\u2014as broccoli likes to do after a few minutes of cooking\u2014this soup stays vibrant green. How? A few handfuls of spinach do the trick. So it looks as fresh as it tastes. Crusty bread makes it a meal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Don\u2019t confuse this with the thick, cream-laden broccoli-cheddar soup made popular by Panera restaurants. Our favorite cream alternative, bouillon, rounds out the flavor so you get a rich-tasting bowl of comfort without the extra fat. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But of course, we won&#8217;t skimp on the cheese. <\/p>\n\n\n<p><\/p>\n<h3 style=\"text-align: left;\"><strong><span style=\"color: #ff6600;\">Broccoli-Cheddar Soup<\/span><\/strong><\/h3>\n\n\n<ul class=\"wp-block-list\">\n<li>1 tablespoon olive oil<\/li>\n\n\n\n<li>2 tablespoons butter<\/li>\n\n\n\n<li>1 large onion, diced<\/li>\n\n\n\n<li>1 leek, trimmed, cut in half lengthwise and rinsed, and sliced<\/li>\n\n\n\n<li>2 cloves garlic, minced<\/li>\n\n\n\n<li>5 cups water<\/li>\n\n\n\n<li>4 1-cup vegetable or chicken bouillon cubes, or equivalent from jar or larger cubes<\/li>\n\n\n\n<li>1 large head broccoli (about 2 pounds)<\/li>\n\n\n\n<li>2 cups fresh spinach, lightly packed<\/li>\n\n\n\n<li>1\u00bd cups shredded sharp or extra-sharp cheddar cheese like Trader Joe\u2019s Unexpected Cheddar<\/li>\n\n\n\n<li>Black pepper<\/li>\n\n\n\n<li>Salt to taste<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\">\n<li>Cut the broccoli top into small florets. Peel and cut some of the stalk into small pieces.<\/li>\n\n\n\n<li>In a large pot, heat oil and butter and saut\u00e9 the onion and leek slowly until soft, about 7 minutes. Add garlic, stir and cook until fragrant, about a minute.<\/li>\n\n\n\n<li>Add water, bouillon and broccoli. Bring to a boil, reduce heat to medium, and simmer until broccoli has barely cooked and remains bright green, about 3-5 minutes.<\/li>\n\n\n\n<li>Turn off heat, let cool a little, and add spinach. Using a blender, pur\u00e9e until smooth. (If using a countertop blender, you may need to process in batches.) Stir in 1\u00bc cups of cheese and place back on low heat just to melt the cheese.<\/li>\n\n\n\n<li>Add pepper and salt if necessary.
