Tender-crusted and fluffy, this no-knead loaf dates back to Prussia in the 1800s, according to the late actor\/baker\/author John Rahn Brau\u00e9, AKA Uncle John.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Bread-Bakers&#8217; Gold<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Brau\u00e9 came from a long line of German master bread bakers. He wrote <em>Uncle John\u2019s Original Bread Book<\/em> (published in 1961) to pass on \u201cpriceless recipes\u2026handed down family to family, baker to baker, friend to friend, tested and retested by my father and thousands of unknowns.\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I stumbled upon Uncle John\u2019s book in the cookbook room of the legendary New England Mobile Book Fair discount bookstore, a now-closed Boston institution. What a find. A gift tied up in ribbon from the Rahn-Brau\u00e9 family to ours. Generations of bakers&#8217; greatest hits.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">As the saying goes, \u201cNostalgia is the best seasoning.\u201d And Uncle John marinated the book in it. Every recipe drips with fond reminiscences.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uncle John&#8217;s Stories<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For instance, he introduced this recipe for &#8220;Grossmutter\u2019s Butter-Bran Bread&#8221; with a terse yet powerful story of how his grandmother came to the US. \u201cTo escape the Prussianism of the nineteenth century, Grandmother Rahn brought nine children over in steerage, plus several tantalizing recipes, this being one.\u201d&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The book pays tribute to his dad, a prizewinning baker who sold his wares on the streets of Hamburg. His dad came to America to be with his girlfriend, one of those nine Rahn children. And he brought along a jar of his starter mixture. The couple married, settled in Iowa, and started a family and a bread-baking business. Just in time for the Great Depression and the Dust Bowl.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">His dad&#8217;s recipes changed with the times. \u201cJust before Dad passed away, Christmas, 1940,\u201d Uncle John wrote, \u201cthe new enriched flour came into being. Dad\u2019s New-Era White Bread is the result, after many nights of work and experimentation. A one-pound loaf sold for five cents!\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">These days, the hardest part of this recipe might be finding wheat bran. Even our Whole Foods doesn\u2019t have it, although they get requests. Maybe it\u2019s a casualty of a global wheat shortage. In any event, whenever we spot Bob\u2019s Red Mill wheat bran we snap it up and stash it in the freezer. There it stays perpetually fresh and ready any time for making Grossmutter\u2019s \u201ctantalizing\u201d Butter-Bran bread.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Bran is also the secret ingredient in wheaty, delicious <a href=\"http:\/\/recipephany.com\/?p=2507\" target=\"_blank\" rel=\"noreferrer noopener\">Matt Murphy&#8217;s Irish Brown Bread<\/a>.<\/em><\/p>\n\n\n<h3 style=\"text-align: left;\"><strong><span style=\"color: #ff6600;\">Grossmutter&#8217;s Butter-Bran Bread<\/span><\/strong><\/h3>\n\n\n<p class=\"wp-block-paragraph\"><em>Adapted from <\/em>Uncle John\u2019s Bread Book<em> (1961, 1965)<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Makes two lofty 9\u201d x 5\u201d loaves, or more smaller loaves<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup wheat bran<\/li>\n\n\n\n<li>3 tablespoons butter<\/li>\n\n\n\n<li>3 tablespoons sugar<\/li>\n\n\n\n<li>2 tablespoons molasses<\/li>\n\n\n\n<li>2 teaspoons salt<\/li>\n\n\n\n<li>2 cups boiling water<\/li>\n\n\n\n<li>2 \u00bd teaspoons active dry yeast (SAF Instant Yeast or Red Star Quick-Rise Yeast)<\/li>\n\n\n\n<li>2 cups water<\/li>\n\n\n\n<li>8 cups all-purpose flour<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\">\n<li>In a large bowl, thoroughly mix bran, butter, sugar, molasses, and salt with 2 cups boiling water. Cool to lukewarm.<\/li>\n\n\n\n<li>Add 1 cup of flour, yeast, and 2 cups of water and vigorously beat until satiny-smooth. (We use a dough whisk, but a wooden spoon or stand mixer should also work.)<\/li>\n\n\n\n<li>Gradually add the remaining flour and beat until the mixture reaches a doughy smoothness, both soft and light.<\/li>\n\n\n\n<li>Turn twice in a greased bowl, cover with plastic wrap or a clean cloth, and let rise until doubled, about 1 to 2 hours, depending upon the warmth of the room.<\/li>\n\n\n\n<li>Turn out onto a lightly floured surface. Cut into two portions for large loaves, or more for smaller loaves. Shape dough into loaves and place into lightly greased loaf pans. Let rise until doubled and crowned about an inch above the rim of the pan.<\/li>\n\n\n\n<li>While dough rises, preheat the oven to 325\u00b0.<\/li>\n\n\n\n<li>Bake about an hour (for large loaves), or until the internal temperature reaches 200\u00b0 on an instant-read thermometer.<\/li>\n\n\n\n<li>Remove loaves, lightly brush with melted butter or your favorite topping, and cool on a rack. \u201cNow stand off a bit and marvel at your handiwork!\u201d wrote Uncle John.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Brau\u00e9&#8217;s Butter-Bran Bread.
