Most people know her for her novels, but she\u2019s also a clever cook and baker. Her latest success, <em>Ms. Demeanor<\/em>, is a finalist for this year\u2019s prestigious Thurber Prize for American Humor. In it, to our delight, she spices up her usual witty dialog and romantic shenanigans with a little fun with food. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">With minestrone, ingredients and quantities depend upon your mood and what\u2019s in your fridge. Swap out different veggies and beans and see what happens. In the great Italian tradition, Ellie\u2019s minestrone recipe provides guidelines rather than strict instructions. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">LIke snowflakes, no two minestrones are alike. No Polizia di Minestrone will ever knock at your door.<\/p>\n\n\n<h3 style=\"text-align: left;\"><strong><span style=\"color: #ff6600;\">Pressure-Cooker Chicken Minestrone<\/span><\/strong><\/h3>\n\n\n<p class=\"wp-block-paragraph\"><em>Adapted from Elinor Lipman\u2019s pressure-cooker minestrone recipe<br>Serves 6-9<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Olive oil for saut\u00e9ing<\/li>\n\n\n\n<li>About 1 pound chicken tenders or boneless chicken breast, cut into about 1-inch cubes<\/li>\n\n\n\n<li>1 large onion, chopped<\/li>\n\n\n\n<li>1 or 2 cloves garlic, minced<\/li>\n\n\n\n<li>2 stalks celery, diced<\/li>\n\n\n\n<li>2 carrots, diced<\/li>\n\n\n\n<li>A handful of fresh green beans, cut into about 1-inch lengths<\/li>\n\n\n\n<li>1 zucchini, diced<\/li>\n\n\n\n<li>Frozen peas, to taste<\/li>\n\n\n\n<li>28-ounce can crushed tomatoes<\/li>\n\n\n\n<li>14.5-ounce can small diced tomatoes with Italian spices<\/li>\n\n\n\n<li>Chicken bouillon cubes to taste (about 4-6 1-cup cubes)<\/li>\n\n\n\n<li>6 or more cups water<\/li>\n\n\n\n<li>At least one cruciferous veggie: your choice of broccoli, cauliflower, cabbage, Brussels sprouts, turnip, etc.<\/li>\n\n\n\n<li>Parmesan rind (optional) <\/li>\n\n\n\n<li>16-ounce can of chickpeas<\/li>\n\n\n\n<li>16-ounce can of red kidney beans, or other bean of your choice<\/li>\n\n\n\n<li>Italian herbs, pepper and salt to taste<\/li>\n\n\n\n<li>Macaroni cooked al dente, 8 ounces or more, served at the table<\/li>\n\n\n\n<li>Grated Parmesan or Romano cheese to garnish<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat a couple of tablespoons of oil in a pressure cooker or Instant Pot. Add cubed chicken and saut\u00e9 on medium heat until barely done. Remove to a plate and set aside.<\/li>\n\n\n\n<li>Add more oil if needed.
