Chicken with Red Gravy riffs off that beloved tomato-wine sauce. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But with chicken thighs rather than red meat, it cooks faster, tastes lighter, and soaks beautifully into quick-cooking couscous or polenta. So you can treat your family or guests to the joys of red gravy whenever the mood hits you.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>But is it Italian or French?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When I gave this recipe to my sister-in-law Chris, she exclaimed, \u201cIt\u2019s \u2018Meal A\u2019!\u201d I had forgotten that her go-to favorite for decades, Chicken Proven\u00e7al from <em>Tidewater on the Half Shell, <\/em>drenches chicken in that very same red gravy. Even though it has a few more ingredients, her recipe tastes like a twin. And yet its name is so French, it even has a cedilla.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">So, is this dish Italian or French? Let\u2019s just settle on Mediterranean\u2014too good to confine to any country\u2019s borders.<\/p>\n\n\n<h3 style=\"text-align: left;\"><strong><span style=\"color: #ff6600;\">Chicken with Red Gravy<\/span><\/strong><\/h3>\n\n\n<p class=\"wp-block-paragraph\"><em>Adapted from <\/em>The Boston Globe, <em>which probably adapted from Marcella Hazan<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>6 chicken thighs, bone-in or skinless\/boneless<\/li>\n\n\n\n<li>Salt and black pepper, to taste<\/li>\n\n\n\n<li>Flour (for sprinkling)<\/li>\n\n\n\n<li>2 tablespoons oil<\/li>\n\n\n\n<li>2 medium onions, sliced<\/li>\n\n\n\n<li>1 green pepper, cored, seeded, and sliced<\/li>\n\n\n\n<li>5 cloves garlic, minced<\/li>\n\n\n\n<li>2 teaspoons dried thyme<\/li>\n\n\n\n<li>1 teaspoon dried oregano<\/li>\n\n\n\n<li>1 cup red wine (or water)<\/li>\n\n\n\n<li>1 can (28 ounces) diced or crushed tomatoes<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Sprinkle thighs with salt, pepper and flour. In a large frying pan, heat oil on high until shimmering. Brown thighs, remove, and set aside.<\/li>\n\n\n\n<li> Reduce heat to medium. Add onions, green pepper, garlic and salt. Cook, stirring frequently, for about 10 minutes or until softened.<\/li>\n\n\n\n<li>Add thyme and oregano and cook, stirring, 1 minute. Pour in wine (or water) and cook, scraping the bottom, for 2 more minutes. Stir in tomatoes and bring to a boil.<\/li>\n\n\n\n<li>Return chicken to pan and lower heat. Cover with lid partially off so some steam can escape. Simmer for 1 hour, stirring occasionally, until meat gets tender.
