Capture all the spiced apple goodness you love in a pie—but without the crust. This gluten-free, vegan Apple Crisp teams up two of our favorite recipes: Apple Pie and Meri’s Berries. Fortunately, baking with wholesome oats makes it gluten-free. And while you can use an egg, it’s easy to stir up a flaxseed “egg” to turn it vegan.
Mix up the sweetly spiced apple filling and then pour it right into a greased pie plate. Then sprinkle it with Meri’s crumbly oatmeal dough for a crisp, cookie-like topping. This quick and easy gluten-free Apple Crisp has all the flavor and comfort of America’s favorite pie. Who says you can’t please everyone?
Filling
- 6 or 7 Cortland or other baking apples, peeled, cored and sliced
- ⅔ cups sugar
- 1 tablespoon cornstarch
- ¼ teaspoon nutmeg
- ⅛ teaspoon mace
- ½ teaspoon cinnamon
- 2 teaspoons lemon juice
- ½ teaspoon salt
Topping
- ¼ cup sugar
- 1 cup quick oats (check package for “gluten free” if you can’t have any trace of wheat)
- 3 tablespoons butter (for vegan: Use plant-based alternative like Earth Balance.)
- 1 egg, lightly beaten (for vegan: Mix 1½ teaspoons of ground flaxseed with 1½ tablespoons of water and let sit for 15 minutes until the mixture thickens.)
- 2 teaspoons vanilla
- Preheat oven to 375° F.
- Combine filling ingredients in a large bowl. Pour into a greased pie plate and set aside.
- For the topping, mix sugar and oats in a bowl. Cut in butter or butter alternative (you can use your fingers). Stir in egg (or flaxseed mixture) and vanilla. If too dry, add a little water.
- Crumble the topping over the pie filling. Bake for about 30-40 minutes, or until filling gets bubbly, apples soften and topping browns.
